Rice pudding is known all around the world in various styles. In Nordic countries rice pudding is a traditional Christmas food that over time has merged into a common everyday meal.
Rice pudding is actually “rice porridge” in Finnish, and it is the same stuff you fill your Karelian pastries with. Here is a simple and delicious recipe for the cold winter evenings.
Ingredients (4 portions)
Pudding Ice: 2dl
Whole Milk: 1l
Salt: 1/2 tsp
Boil water in a thick-based pot. Add rice and salt. Let it boil until all the water has been absorbed by the rice.
Add milk in small proportions and make sure the mix will be simmering at all times. Let it simmer around 15 minutes. Remember to stir the porridge continuously so it will not burn.
Cover the pot with a lid and let it brew with a mild heat for about 40 minutes. Stir from time to time and make sure the porridge will not boil over.
Serve with cinnamon and sugar. If you want, you can also enjoy your porridge with jam or juice soup (mehukeitto in Finnish).
